With bitter cold temperatures outside, I thought it was the perfect time for a nice pot of hot soup. Nothing tastes better to me on a cold winter's day than a pipping hot bowl of yummy, homemade soup.
"Soup-er" Easy Chicken Noodle Soup
Season one 3-4 lb. chicken and put it into the Pampered Chef Covered Baker for about 25 minutes (seriously...this covered baker is a miracle worker...you can cook just about anything in it using the microwave and the meat comes out perfectly cooked and tender).
Throw veggies into a large stock pot and add all natural chicken broth. If I were on Top Chef I'd make my own broth, but this working mom of two finds that Swanson's broth with no MSG works great too.
If you're a slow chopper like me, your chicken will be done right about the same time you are finished chopping. Don't forget the meat thermometer to make sure it's thoroughly cooked!
Let the veggies simmer for about 20-25 minutes (or until they are cooked to your liking). Cut up the chicken during this time and put it into the soup pot right at the end.
I sometimes also add diced potatoes with the veggies. It makes the soup a little chunkier and a bit more hearty. You can add noodles directly to the soup pot and cook them that way, but I cook them separately. If you are planning to freeze some of the soup for later, I find the soup freezes better without the noodles. I just cook up the noodles, put some in the bottom of each bowl, and then serve the soup over top of them.
Finally, eat and enjoy!
One of my "blogging New Year's Resolutions" was to try and post a recipe or two each month...one thing that I make and one thing that the kids cook with me. Since it's practically the end of January, I realized today that I'm not doing very well with that resolution. Would you expect any less?!?!?
Seriously though, look for more recipes to appear from time to time. I LOVE cooking and trying new recipes. I also love cooking with my kids. Periodically I'll try to share some of my successes in the kitchen...as well as some of my huge flops.

Genius! I have that exact baker and will be trying this out! I never knew it could be used in the microwave... I am going to try salmon in it today. Thanks!
I haven't tried fish in it, but I have done chicken, pork, and turkey breast. It's so much easier than heating up the oven, AND takes less time to cook. It's perfect after I've worked all day and don't have tons of time to get dinner on the table.
To do the big chicken, you don't have to cover it. Most other meats I do put the lid on while it's cooking. Let me know how your salmon turns out!
Add a bay leaf to the broth and veggies during simmering. A clove or 2 of garlic is great too and keeps vampires way.
Looks delicious and easy too! The Pampered Chef baker is now on my "to get" list. My stomach thanks you, my checkbook does not!!
